Dill Pickle Pasta Salad

Ingredients:

16 ounces rotini pasta cooked, drained, and rinsed in cool water (check for safe ingredients)

2 cups whole dill pickles diced and reserve juice (about 5 large pickles)

1½ cups Vegan cheddar (Optional)

1 to 2 tablespoons fresh dill chopped

½ cup Vegan mayonnaise

½ cup Dairy-free sour cream

1 tablespoon dried dill

½ teaspoon onion powder

½ teaspoon black pepper

½ teaspoon dried parsley

2 tablespoons dill pickle juice

Directions:

In a small mixing bowl whisk together mayonnaise, dairy-free sour cream, dried dill, onion powder, black pepper, dried parsley, and pickle juice to make the dressing.

In a large salad bowl add the cooled pasta, dill pickles, vegan cheese, fresh dill, and dressing.

(Tip: Make sure your pasta is fully cooled before adding the other ingredients, or your cheese will start to melt.)

Stir ingredients together until well combined.

Cover with plastic wrap and refrigerate for at least one hour to allow the flavors to blend.

Buffalo Chicken Wraps

Ingredients:

2 1/2 cups shredded rotisserie chicken, white meat (Check your ingredient list, watch out for carrageenan)

1/2 cup franks red hot sauce

1 cup halved cherry tomatoes

1/4 cup sliced red onion

1 avocado, sliced

10 romaine leaves

Vegan Ranch (I prefer Hidden Valley)

To a small bowl add chicken and franks red hot sauce. Using a fork stir to combine everything.

To each romaine leaf add: buffalo chicken mixture, cherry tomatoes, sliced red onion and 2 slices of avocado.

Drizzle with ranch dressing.

Cucumber Everything Bagel Salad

Ingredients:

2 English cucumbers, thinly sliced, peeled and deseeded if desired

I teaspoon salt + more to taste

1/2 cup Vegan sour cream

1 Tbsp Vegan Mayo (optional, makes it creamier)

3 tablespoons everything bagel seasoning

2 teaspoons white vinegar

1/2 black pepper + more to taste

1/2 cup thinly sliced red onion

Directions:

Toss the cucumbers with the salt in a colander over the sink or a bowl. Allow to rest for 30 minutes to an hour.

After 30 minutes, gently rinse the cucumbers, then press them down using your hands to squeeze out any moisture or pat them dry using paper towels.

In a bowl, prepare the dressing by combining the vegan sour cream, everything bagel seasoning, white vinegar, ground black pepper and optional mayo.

Combine the dressing, cucumbers, and red onion then add salt and pepper to taste.
Serve immediately or refrigerate for at least 30 minutes to allow the flavors to mix thoroughly.
